There are options for writing data to SD in XOD. You could do this, then move SD to computer and graph.
There are graphic display nodes that might be able to help show the data to the appropriate hardware. If you only want a limited history, you could use gweimer/utils/queue-buffer to maintain history for each data point & feed that to display. Your “time” would be “now” and X-number of sample times before “now”. You would need a queue-buffer node for each data-value, for each “time” (3 sensors times # “times” to display).
